THE CURE: All-You-Can-Eat Menudo New Year's Day at Toluca's in Beaumont

For those who anticipate hangovers on New Year's Day, Lisa Sanchez at Toluca's in Beaumont has the remedy: All the traditional red chile menudo you can eat for $7.99.

Menudo done right can take many, many hours, and this year Lisa Sanchez at Toluca's in Beaumont is doing the hard work so those seeking the cure on New Year's Day don't have to.

"We hear that menudo is a good cure for hangover," Sanchez, 42, said Friday during a quick break from her busy kitchen at Toluca's.

"And because everyone is going to be out celebrating New Year's Eve until New Year's Day, we're going to be open to celebrate with them, and we're going to offer them all-you-can-eat menudo, for $7.99."

Sanchez, a Banning resident and graduate of Banning High, said she'll be making a traditional, red chile-based menudo to help ring in 2012.

"In the Hispanic culture background, it's known as a remedy to cure hangover," she said. "It's popular in Mexico, and a lot of Mexican-Americans know menudo's the cure."

Menudo is "a beef tripe and hominy, with a red chile sauce, and we boil the chiles and we sift them and we make a red mix, all combined together. And it's usually topped with onions, cilantro, oregano, salt, and sides of lemons and some tortillas," Sanchez said.

"It's a traditional menudo, with a red sauce base. We hope everybody will celebrate Año Nuevo at Toluca's. We don't know where they'll get their hangovers, but we'll be working to get ready for them."
